​How to buy a freezer full

We know it's a big purchase! 
There are a few more things to consider, and until you're familiar with the process it can get overwhelming.

First of all, where do you even find a steer?  Who raised it?  How was it finished?  
Second, who will render it and deliver it to the processor?  
Third, how do you want it butchered...  osso bucco-style shank? Bone in? Bone out?
Fourth, how do you get it home?
Finally, how big of a freezer do you need?

No sweat. We've got you covered.

We do bulk beef differently.
Most ranchers will sell you your share first - say a quarter beef.  Once the other three quarters are sold, the animal is taken to the butcher and you are contacted to come hash out among the other owners who gets what.  You'll get a standard cut sheet filled with questions like "bone in or out?" and "osso bucco?" and "Short ribs, plate, or Flanken-style?" 
And, of course, you'll have to the split the fewer cuts with the other 3 customers. 
So, there are 4 of you.. but only 2 flank steaks?

Clear Creek Beef does it differently.
First -and most important- we process animals when they are ready, not when they are sold.  (See hand finishing under the FAQ for details.)  When the animals are finished to our rigorous standard, they are processed according to our standard cut sheet with what we feel provides a good balance between quality steak, ribs, roasts, and ground.  Second, in accordance with the Package Shares Grid, your order will contain the precise number of packages/cuts according to the share you requested.  It will always be the same - the same weight, quality, cuts, and number of packages.

In addition to our pre-determined shares - eighths, quarters, halves, and wholes - we offer a Sampler pack (in two sizes) and three specialty packs.  The package chart is located below.

​No rush home before the beef starts to thaw.

Here's the Breakdown

A quarter of a beef is a standardized measure of actual beef from a full steer.  Our steers average 750 pounds hanging weight (like 2 sides of beef hanging in a walk-in freezer) with about 460 pounds of actual beef ready to eat after butchering.  

Let's do the math.

A full beef will yield around 460 pounds.

A half beef would yield around 230 pounds.
A quarter yields around 115 pounds​.


There are no actual "quarters" or "eighths" since the premium cuts of beef are in different parts of the steer and the rear quarter is all chuck!  So, a quarter is actually a 'split half' or 'half of a half'

In summary, a quarter of a beef yields a little bit of everything.

Did we mention your 1/4 is delivered to you {IN} a Freezer?

The beef is delivered anywhere in the Treasure Valley in a small chest freezer. For ease of access, beef is usually delivered in a larger freezer than necessary. This just means you have a bit more freezer space for your other frozen goods.
